I can't begin to tell you how light and moist and scrummy this cake is......
You'll just have to make one for yourself and then comsume vast quantities of it with lashings of syrup and/or cream and/or ice cream......
Lemon Coconut Syrup Cake
250g butter
1 cup of castor sugar
2 tsps of lemon rind
3 extra large eggs
1 cup of plain flour
2 tsps baking powder
1 cup of dessicated coconut
3/4 cup of Greek style yoghurt
1. Beat butter and sugar until light and fluffy
2. Beat in lemon rind and eggs, one at a time, beating well after each egg
3. Combine flour, baking powder and coconut and fold in, alternating with Greek yoghurt
4. Put mixture into a cake tin and bake at 180 degrees (160 for a fan oven) for 50 mins - cover with foil if it browns too quickly
5. Stand in pan for 5 mins
6. Poke 6-8 holes in the cake and spoon syrup over it whilst still hot
7. Serve warm..... yum!
Lemon Syrup
3/4 cup of castor sugar
1/4 cup of water
1/3 cup of lemon juice
Bring ingredients to the boil. Reduce heat and simmer for 5 mins. Pour over hot cake.
