just what's needed in this weather.....

we've been experiencing a bit of a heat wave in Ballarat the last few days.....

puts me off turning the oven on for any reason......

and so it was that I turned to a no-bake recipe from my sister-in-law for a little sweet treat 
to calm the cravings of my hungry bunch..... 
well, me actually, but I'm sure the rest of the family will not complain 
when they get to tuck in aswell......

so here we have a speedy little recipe for.....

Peanut Butter No Bake Cookies

2 cups of sugar (I used castor)
1/2 cup of butter
1/2 cup of milk
1/3 cup of cocoa

pop these in a large saucepan and heat until boiling and then remove from heat..... 
this is the only 'warm' thing that needs to be done and it only takes a couple of minutes for the mix to boil .... good job too!!

then you need to stir in:

1/2 cup of peanut butter {crunchy or smooth, depends on you preference}
and 1/2 tsp of vanilla essence until they are all nicely mixed in.......

then pop in 4 cups of oats and mix it up, giving those biceps a little workout while you're at it, 
until all the oats are thoroughly coated with yummy, chocolatey goodness...... 
and let me tell you, that little bit of 'exercise' is enough to break a sweat around here at the moment.....

finally, drop spoonfuls of mixture onto a non stick baking sheet or waxed paper 
and pop them into the fridge to set...... 
alternatively, use your hands, as I did, to make little balls of the stuff 
and then you get to lick it all off your hands at the end.... 
maybe I shouldn't share my kitchen secrets with you all, 
you may not ever want to come and have morning tea with me......

anyway, moving along swiftly, depending on the weather 
- stinking hot here - 
keep them refrigerated and enjoy the cool little bites whenever the fancy takes you......

this recipe makes a TON of bitsized cookies - maybe about 60 - so half it if you want a smaller batch......

right I'm off to find a fan to sit by......
