buttery goodness......

Brian took himself off this morning.....

off to Sydney no less.....

there's a national philosophy competition happening there and 
Brian is accompanying a team of students from his school
who have gone to compete......

lucky them..... 
{actually I'm not sure how 'lucky' Brian feels
taking a group of students away to Sydney for
three days...... }

so the three of us left here are going to live it
up a bit.....

first, we are going to have dinner with some
friends, which is always lovely.......

Evie and I made a little sweet treat to take with 
us.......

Viennese Butter Biscuits....


this was a recipe given to me by 
my lovely friend Karen 
{who has just given birth to a beautiful daughter....... 
yipee...... 
well done Karen......}

these are a little similar to a 'yo-yo' or a 'melting moment'
for those of you who live here in 'the south'.....

if you would like to give them a go,
 here is the recipe......

Vienese Butter Biscuits with
a dark chocolate ganache
{does that sound a little like I am on
Masterchef?}


175g butter - softened
40g icing sugar
1 tsp vanilla essence
175g plain flour
40g cornflour

first you need to sift the icing sugar over the butter
and beat it until it is creamy.....
then you add the vanilla, sift in the flours and stir
until smooth.......
pop teaspoons of the mixture onto a baking tray
and flatten them slightly......
bake for 12-14 mins at 190 degrees until golden......
 then pop them onto a cooling rack.......

next comes the dark chocolate ganache {yum}....
melt 75g of dark chocolate and stir in 
4 tbsp of double cream......
put the mixture into the fridge for about an hour 
to firm up, stirring occasionally......

when the biscuits have cooled and the ganache
has firmed up, take a nice big dollop of the ganache, 
{I like a nice bit dollop of filling in my biscuits,
you've got to be able to taste it......}
spread it out evenly over one biscuit and 
sandwich another one on top of it.......
