I'm in the mood for baking...

got home with the kids from school today and just had the urge to bake (not the best decision I've ever made with temperatures being the way they are at the moment but there you go, you can't always control when those urges will strike!)

I found a great recipe for carrot cake (one of my favourite cakes in the whole world) here. I had pretty much everything I needed to hand (a sign that I SHOULD go with that urge and do some baking I felt!!) so I grabbed my mixing bowl and mixer and away I went....


the icing was just delicious (I had to stick my finger in a couple of times for a taste just to make sure of course) and a good alternative to the cream cheese topping I would normally associate with carrot cake (and I didn't have any cream cheese in the fridge which would have put a spanner in the works had the recipe called for a cream cheese topping)


and needless to say EVERYONE (even Evie who looked at the mixture in the bowl and said 'Carrot cake? I HATE carrot cake, yuck, yuck, yuck') consumed at least two pieces each....


a definite hit I would say.....
