I've never done it this way before, I've always made it into a roulade so this was a bit new...... (oh my goodness, diviating from the 'way it should be done' is not usually in my repertoire - whatever is happening to me?)
The mixture was enough for a two layer cake but as they came out the oven and cooled I forgot to loosen the edges around the pans so they had REALLY concave tops.....
OK, I can work with that...... I filled the hollow in the bottom layer with a good lashing of dark chocolate mousse (I had enough left over from yesterdays bake-a-thon so didn't need to make any more of that), topped with some fresh raspberries and a layer of whipped cream and plonked the second cake layer on top. I decided to just dust this top layer with icing sugar and grated chocolate shavings.
Concave top or not...... it was still yummy in my tummy!

OMG that looks delicious, you had me at raspberries though. To lose the concave top you could have maybe turned it upside down so the concave bit sat on top of the cream/mousse/raspberries
