first things first, the mailbox surprised me with this LOVER-LY zip which my sister bought in Malvern when she went to the UK Quilt show there a couple of weeks ago...... isn't it darling.....
I think I will pin it up and just enjoy its loveliness.....
and I made {with evie's help, because EVERYTHING done in the kitchen needs a little bit of evie-help don't you think.......} a batch of apple and cinnamon muffins......
these are the easiest muffins around to make......
just start off with the basic muffin mix and add your own flavour.....
easy as sunday morning.....
basic muffin mix
2 cups of self-raising flour {I use one cup of white flour and one cup of wholemeal}
1/2 cup of sugar {I use raw sugar}
1 egg - beaten
1/4 cup of oil {use whatever oil is your preference}
1 cup of milk
to the above basic recipe I added two grated granny smith apples and a teaspoon of cinnamon, but use whatever flavouring your like.......
I've added banana, chocolate chip, raspberry........
not all at the same time though.......
although white chocolate chip and raspberry is a REALLY GOOD combination..........
but, you know, do whatever you fancy.......

I mix all my wet ingredients in one bowl and all my dry ingredients in a second bowl and then mix the wet into the dry until just combined........
spoon the mixture into muffin cases and then pop them into an oven at 180 degrees and bake for approx. 20 mins until golden........
{with apple and cinnamon ones I like to sprinkle the top with a little raw sugar before I bake them too........
