oh my goodness.....

most saturdays Betty and I take a little spin down to bakers delight and pick up an apple and walnut scroll to enjoy with morning coffee.....

they are yummy and, I feel, quite necessary in order to boost my energy levels after having had my little jaunt out with Betty....... {can you hear my snort of laughter at myself there? who am I trying to kid? bakers delight is about 300m down the road - that's less than a km roundtrip - I really don't need any extra sustenance...... I just love their apple and walnut scrolls......}

anyway, regaining my composure let me go on...... after resurrecting my hot cross bun recipe and making some for Easter I thought that this morning I should have a go at making some yummy scrolls myself..... how hard could they be.....?

I searched online and found a recipe here that I used as my basis but gave it quite a few little 'debbie tweaks'......

I popped all the ingredients into my bread machine - because I am ever so lazy when it comes to kneading bread and suchlike and the saying 'why have a dog and bark yourself' always comes to mind - so in it all went and I flicked the switch to the dough setting.....

it was one of those occasions when the dough rose so much that the top of the bread machine was being pushed open by it...... and it looked so light and airy...... already I was beginning to think I was on to a winner.....

I rolled out just half the dough and spread a paste - which I had made by cooking up a granny smith apple, a handful of sultanas and some soft brown sugar and then blitzing it in my blender - all over the surface...... {I know, I know, it doesn't look all that tempting at the minute, but stick with me...... it gets better..... promise......}

I rolled the dough up, sliced the 'sausage' into 12 pieces and popped them onto a baking tray and left them in a warm place to rise til they had doubled in size, then I popped them into the oven for about 25 mins.....

this is how they looked immediately after coming out the oven...... I'm liking the look of these.......

while they were still warm I brushed on a runny icing glaze so they didn't go hard and dry..... yum, yum, getting better by the minute......

evie then added the final walnut glaze on top.....

and, OH MY GOODNESS.......

they were light and fluffy, sweet but not sickly, more-ish....... definitely more-ish..... infact the children and I had two each.......

AND, to top it all off, they were declared 'better than the bakers delight ones' by the boy......

woo-hoo..... there is no higher praise to be had......

They look very very yummy!!! I still haven't made it to Marks & Sparks to find you fav bikkies... maybe I should get a "Betty" and ride down in my abaya... hmmmm... then again, maybe not :)

They look so much nicer than the bakers delight ones. You must have felt very proud, isn't it nice when you make something homemade and it turns out just right. :)
